"Barry's Red"

Ingredients
2 TBS butter, 2/3 TBS oil (Vegetable,Canola, Whatever!!), 1 Lg. onion coarsely chopped or 1 TBSP Onion Powder, 3 LBS. lean beef cut into "small" bite-sized cubes ( I use Top Sirloin, but you can use Chuck or VERY coarsely ground lean Hamburger or Inside Round - 1/2 inch cubes or less!!!, 3 cloves garlic- finely chopped, 1 TBS ground Hot Red Chili, 4 TBS ground Mild Red Chili (as an alternative use 8 TBS Chili Powder), 2 Tsp Ground Cumin, 3 Tsp Paprika, 1 Tsp Oregano, 1 Tspfresh ground black pepper, 3 cups water, 1 1/2 tsp salt, 1 can mushroom pieces/stems, 2 TBS brown sugar. * Note!! If you prefer beans with your Chili, add 1 -14 oz. can of Red Kidney Beans at same time as water (I don't)
Steps
1. Add oil (so butter doesn't burn) & then butter to a large heavy pot & melt over medium heat. Add onion & cook until translucent (clear). Do not brown or overcook!!!! 2. Combine meat with garlic, chili, cumin, paprika, oregano,pepper,& add to pot. Stir occasionally until meat is evenly browned (still on "medium" heat!!!). Add mushrooms & sugar. 3. Stir in water, salt, tomato sauce. Bring to a boil, then lwer heat & simmer uncovered for about 2 1/2 to 3 hours, stirring occasionally, until meat is very tender & flavours are well-blended!! Add more water, if necessary.Taste & adjust seasonings to suit palate!!!
