Ingredients
-2lbs of lean ground beef
-2 tbsp olive oil
-2 med yellow onions chopped
-3 stalks of celery chopped
-1 small habanero pepper roasted (chopped into tiny pieces wear gloves as a precaution~these peppers are hot!!!)
-3 medium fuji or spy apples (peeled and chopped)
-2 bulbs of garlic
-2 tbsp fresh or dried parsley
-2 tbsp basil
-2 tbsp oregano
-3 cans diced plum tomatoes
-2 cans of tomato paste
-2 cans drained kidney beans
- 2 cups of water
-2 tbsp Worcestershire sauce
Steps
Gather and chop into equally sized pieces the onions, celery peppers, apples and garlic. Then in a large pot combine the first 10 ingredients and cook at a med heat until all ingredients are cooked through. Usually once the celery softens it is ready for the next step!
Next add the canned items, water and Worcestershire.
Bring contents of pot to a boil and then turn to allow for a slow simmer. Stir ocasionally. Cook at a slow simmer for 2 hours or until sauce of chilli has thickened. Add salt and pepper to taste!
This chilli is a fav of my children and they have no idea that there is the added nutrition of the apples( they also add a subtle sweetness to the heat of the chilli)!!
Don't forget to enjoy!!
