All Time Favourite Chili Recipe

Ingredients

10 Cloves minced garlic
10 Scallions finely chopped
1 1/2 Tbsp Olive Oil
1 Large green pepper, chopped
2 Cups Onion, chopped
2 Cups Mushrooms, chopped or sliced
4 Jalapeno (or hotter) Peppers, minced
1 lb lean ground beef, pork or chicken
3 Tbsp Chili Powder
2 Tbsp whole wheat flour
1 tsp Thyme
1 tsp Oregano
1 tsp ground Cumin
1/2 tsp salt
2 x 8 oz can of Tomato Sauce
1 Cup Beef Broth
2 x 19 oz cans of Red Kidney Beans, drained and rinsed

Steps

In a large skillet heat oil until hot on medium heat. Add garlic and scallions, cook, stirring until soft (about 2 minutes).

Add green pepper, onion, mushrooms and jalapenos and cook until soft.

Stir the meat into the skillet, breaking it up while stirring. Sprinkle meat with chili powder, thyme, oregano, cumin and salt and cook until meat is no longer pink.

Sprinkle the meat evenly with flour, stirring to combine.

Add tomato sauce, broth, beans and bring to a boil.

Reduce to a simmer, cover and cook until the flavours are blended and the sauce is slightly thickened, about 10 minutes.

You can reduce the sodium content of recipe by using low sodium tomato sauce and beef broth.
